Ingredients
green cardamom - 1/2 teaspoon turmeric - 1 teaspoon cumin seeds - vegetable/sunflower oil -1 tsp salt
Preparation
Rinse the rice with cold or lukewarm water in a bowl or sieve until the water runs clear from cloudy starch.
Measure 400ml of water and boil.
Heat 2 tsp of vegetable/sunflower oil in an (ideally) non-stick pan on medium heat.
Add the cloves, cardamom, turmeric and cumin seeds to the pan. Stir the spices for 30 seconds on medium heat, and add 1 tsp of salt.
Add your rinsed and drained rice to the pan. Mix well with your spices and oil, making sure all the rice is coated.
Add 400ml of boiling water to the pan, and stir well.
Bring the water to a boil, and then reduce the heat to a low setting, so it simmers very gently. Cover with a lid and leave for 17 minutes exactly. Do not stir the rice during this time.
Turn off the heat and leave the lid on until you are ready to serve. Remove the whole spices before serving.
